Stuffed Mini Sweet Peppers

Delicious and colorful stuffed mini sweet peppers perfect for parties, appetizers, or healthy snacks.

Ingredients

  • Mini sweet peppers
  • Cream cheese (or other preferred stuffing)
  • Optional: jalapeños, herbs, spices, breadcrumbs, olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice mini sweet peppers in half lengthwise and remove the seeds.
  3. In a bowl, mix cream cheese with optional ingredients and stuff each pepper half.
  4. Arrange stuffed peppers in a baking dish and drizzle with olive oil.
  5. Bake for 15-20 minutes until peppers are tender and filling is warm and slightly bubbly.
  6. Let cool for a minute or two before serving warm or at room temperature.
