  • 1 cup mashed sweet potatoes (about 1 medium-sized sweet potato)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon ground cinnamon (for frosting)
  • 1/4 cup chopped pecans (optional topping)
  • 1 tablespoon orange zest (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  3. Add in the egg and vanilla, beating until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Roll the dough into balls of 1 to 1.5 inches and place on a lined baking sheet.
  7. Bake for 10-12 minutes until edges are golden.
  8. Prepare frosting by beating together softened butter, powdered sugar, heavy cream, vanilla, and cinnamon until smooth.
  9. Once cooled, frost cookies and top with pecans and orange zest if desired.
  10. Serve warm and enjoy!
