Taco Casserole

A satisfying and hearty dish combining the flavors of tacos in a warm casserole, perfect for family dinners and gatherings.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • Optional toppings: sour cream, avocado, cilantro, salsa

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned, about 6-8 minutes. Drain excess fat.
  3. Sprinkle taco seasoning over the beef and stir in diced tomatoes with green chilies. Cook for an additional 2-3 minutes.
  4. In a baking dish, layer half of the tortilla chips as the base.
  5. Spread the beef mixture evenly over the tortilla chips.
  6. Sprinkle black beans over the beef mixture.
  7. Add half of the shredded cheese on top of the black beans.
  8. Repeat the layers with the remaining tortilla chips, beef mixture, black beans, and cheese.
  9. Top with any leftover cheese.
  10. Bake for 20-25 minutes until the cheese is melted and bubbly.
  11. Let cool slightly before serving with optional toppings.
