Tater Tot Casserole

A simple, hearty Tater Tot Casserole that is perfect for busy weeknights. This customizable dish is loved by both kids and adults, making it an excellent choice for families.

  • 1 bag frozen tater tots
  • 2 cups mixed vegetables (such as bell peppers, spinach, and onions)
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can cream of mushroom soup
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cream of mushroom soup and milk. Add salt and pepper to taste and stir until well mixed.
  3. Add mixed vegetables to the soup mixture and stir until coated.
  4. Grease your casserole dish and spread half of the frozen tater tots evenly at the bottom.
  5. Pour the vegetable mixture over the first layer of tater tots, spreading it out evenly.
  6. Sprinkle a generous layer of shredded cheese on top of the vegetable mixture.
  7. Top with the remaining tater tots. Optionally, sprinkle more cheese or breadcrumbs on top.
  8. Bake in the preheated oven for 30 to 35 minutes until tater tots are golden brown and cheese is bubbly.
  9. Allow the casserole to cool for a few minutes before serving.

Notes

For added variation, consider trying different types of cheese, adding proteins, or mixing in fresh vegetables. This dish can also be prepared in advance and stored in the refrigerator before baking.
