Texas Roadhouse Smothered Chicken

A comforting and satisfying dish featuring tender chicken breasts smothered in sautéed mushrooms, onions, and gooey cheese, perfect for family dinners or to impress guests.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream (optional)
  • 1 cup shredded Monterey Jack cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  4. In the same skillet, melt the butter and cook the onions for about 5 minutes until softened.
  5. Add sliced mushrooms and cook for another 5 minutes until tender.
  6. Pour in the chicken broth and simmer for 3 minutes.
  7. If using, stir in heavy cream for a richer sauce.
  8. Return the seared chicken to the skillet and spoon the onion and mushroom mixture over it.
  9. Sprinkle cheese evenly over the chicken.
  10. Bake for 10-12 minutes or until the chicken is cooked through and cheese is melted.
  11. Garnish with fresh parsley and serve hot.
