Turkey Sweet Potato Skillet

A nutritious and colorful one-pan meal featuring ground turkey, sweet potatoes, and vibrant vegetables, seasoned to perfection.

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups fresh spinach, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Avocado slices for garnish
  • Red pepper flakes for garnish
  • Lemon juice to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion and garlic until fragrant, about 2-3 minutes.
  3. Add sweet potatoes and cook until softened, about 10-15 minutes.
  4. Add ground turkey and cook until browned, breaking into pieces, about 5-7 minutes.
  5. Season with smoked paprika, cumin, salt, and pepper.
  6. Add bell pepper and spinach, cooking until spinach wilts, about 2-3 minutes.
  7. Garnish with avocado slices, red pepper flakes, and lemon juice before serving.

Notes

Adjust seasonings to taste and feel free to add other vegetables for variety. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
