Tzatziki Chicken Salad

A refreshing and healthy salad made with juicy chicken and creamy tzatziki sauce, perfect for a light meal or picnic.

Ingredients

  • 1 medium cucumber, finely grated
  • ¾ cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cooked rotisserie chicken, shredded into bite-sized pieces
  • ½ red onion, diced

Instructions

  1. In a mixing bowl, combine the grated cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and black pepper. Mix until well combined.
  2. Shred the rotisserie chicken into bite-sized pieces.
  3. In a large bowl, combine the shredded chicken and diced red onion. Pour the tzatziki sauce over the mixture and fold gently until everything is well coated.
  4. Serve immediately or refrigerate for about 30 minutes to enhance the flavor.
